The news of Chef Tramontano after the Michelin Star

After just eight months in our kitchens, the young Luigi Tramontano gave La Serra Restaurant a new shining light. In November 2017, indeed, the restaurant of the Hotel Le Agavi was recognized with the prestigious award of the Michelin Star, another satisfaction for the genius of Campania, who directed other esteemed restaurants before.

Honored by the new recognition, Chef Tramontano spent the winter enjoying the deserved fame, maintaining his humility as he has always done during his personal and professional path. At the top of his principles, you find passion for gourmet and the true joy of giving all the best every day in the kitchens. At night, out of the apron, the chef falls asleep with the typical satisfaction of those loving what they do. Day by day.

Proposals 2018 

This dedication is in line with the concept of 5-star hospitality of the Hotel Le Agavi: nothing is left to chance here, every detail is played to perfection. To provide an unforgettable holiday in Positano, from the first to the last moment. In the kitchen, the aim of the chef is leading you to enjoy unique emotions, bite by bite, and for 2018 season a lot of amazing surprises are already waiting for you.

Starting from raw materials, which are going to evolve in all the restaurants he leads, according to the creation of healthy and light gourmet menus, suitable for summer times. A decrease in white flours, refined sugars and fat, in favor of whole-wheat and balanced alternatives, perfect to rediscover the authentic local flavors.  

Thanks to the precious exchange of views with his wife Nicoletta, sommelier of the Hotel Le Agavi, and the father Antonio, his reference point during training, Tramontano created amazing dishes, with blending of updated traditional recipes and locally-sourced ingredients.

The Menu: news and confirmations

The deep analysis of raw materials, together with the beauty of landscapes in Positano and the Amalfi Coast, gave birth to the new menus of the restaurants of the Hotel Le Agavi. From one side, his most loved dishes, such as Gragnano “vermicelli” pasta with anchovies, wild fennel and “blue fish carpaccio”, from the other the new recipes inspired by our land. Among these, special mention deserve the Kandinsky’s lunar eclipse – Crustaceans’ variation with fruits and vegetables – and On the seashore – a suggestive dessert recalling the beach and the shingle of Positano.
